Brine Ambition – An Overview of How to Safely Preserve Foods by Pickling and Fermenting

Brine Ambition is an overview of safe vinegar-pickling and fermenting techniques. This introductory course is designed to provide participants with basic research-based knowledge and scientific resources on the basics of pickling and fermenting. This class is presented as step-by-step technique overviews and is guided by specific learning objectives, with a focus on safety. Participants will learn about the proper equipment, appropriate foods choices, prep and suitable recipes for these methods of home preservation.
